Hacking How do i do this now ?!

Well got a brand new Switch and the SX OS PRO , but now if i do the updates ( controllers , and the SD Card update) i will mostly be in 6.2.0 and i will not be able to use SX OS PRO.

Is it a way to turn that around , i mean like a manual update for a older firmware version before 6.2.0 ?

If it's brand new, then you couldn't hack it anyway, as the exploit was patched in hardware in july.

If you can boot into CFW, then use ChoiDujourNX to update to something before 6.2.

Humm i dont think i can boot into CFW , since i need to insert an Micro SD Card to move boot.dat to the root of it , and as soon as i insert and Micro SD it will prompt the need of an update !

Format the SD card as FAT32, not as exFAT.
