I have a pretty good collection of Switch games and I want to rip them. I am getting a HWFLY for my V2 and my Lite to see if I can get them to backup properly. Any good guides out these I can follow. I have been out of the modding scene since Flash carts and before that was PS2 mods... Any direction would be appreciated.

Use DBI, you can dump Gamecard using MTP, when enabled, you connect DBI running console to PC and you will se on the MTP device a folder for the Gamecard, inside will be NSP, XCI files for the gamecard content, you can copy that to your PC.
