Any of the Rayman Raving Rabbids games are usually a blast for me with my friends. Especially the non-gamers usually have a really good time.

Also, New Super Mario Bros is great 4 player simultaneous action if your friends are more game savvy.

Oh, and several tennis games (including Wii Sports, really) are good 4 player games.

Unfortunately, most of the good ones have already been mentioned. A lot of other multiplayer games are just shovelware that sucks. How about Wii Sports Resort.
