Yes. The jailbreak is done through the USB port, and the updated payloads don't need the drive to work anymore.
I thought you had to have a disk in the drive to make backups work from hd, even demo disk should be enough.......

Yes. You won't need a disk for most games, but some do, so be aware of that. However, jailbreaking your ps3 will make it more useful than ever before.
