As a rule anything easy in the video world is either impossibly basic/highly specialised or less than brilliant.

Ripping, you can still use some of the older tools if you know what you are doing but for a more foolproof one then DVDfab is pretty good:
http://www.dvdfab.com/en/dvd-to-dvd.htm

It does have limited DVD transcoding support but as long as you are using a different program then http://www.free-codecs.com/download/dvd_shrink.htm and maybe vobblanker: http://jsoto.posunplugged.com/vobblanker.htm in there as well (if you only want the main film or to lose an audio track or three then that is easy enough but if you want to lose warnings/some extras and the like it will take a minor bit of effort).

DVD to another format is another matter entirely. You will almost always get better results if you get your hands dirty at the encoding stage but http://handbrake.fr/details.php , http://staxmedia.sourceforge.net/ and most of the big GUI programs you might see at the likes of http://forum.doom9.org/forumdisplay.php?f=78 is a good start for the basics.

In the case of privat copy,
you should try RiAm ( RIp It After Me )

for DVD To Divx or Xvid.
Easy to use

.

For DVD9 to DVD5, Handbrake could do it

suprised that nobody mentioned Clonedvd (together with anydvd).... those are the best programs around in my opinion.
