I have stayed on 5.1 since 6.0 rolled out, but I don't see the point on staying. Nothing is broken, and i'm not getting coldboot anyway. I don't want to go through the hassle of choirdjordjordjordjorNX and I don't see why I would want to downgrade. All I use CFW for is the homebrew menu, I don't install NSPs or anything like that and I would still like to connect to the eshop and play online games (and might as well update officially while i'm not banned). Is there ANY reason not to update? It just seems that there are no cons to upgrading.

You can upgrade without burning any fuses. That gives you the ability to downgrade later if you want and has no disadvantages afaik.
There is a tutorial anywhere here.

You can update without burning fuze, but it locks your switch into auto RCM until you decide to get back to the previous version.

There's really zero reason to not update, especially for people who have no interest in piracy, nor anything in involving risky operations and NSP installing.

If all you use CFW for is the homebrew menu I don’t understand why you use CFW at all. I get the homebrew menu is pretty and all but it doesn’t actually do anything all by itself.

For example if I have updated normally via system update on a non hacked switch are my fuses burnt now?

If you want to update without burning fuses then just update officially and insert a jig before the system restarts. When you see the restart countdown simply hold the Vol + button. Now you will be in RCM. Push the SX OS payload while holding Vol + to access the SX boot menu. Now you can install autoRCM. Now that choidujujuNX is a thing this method isn't as much of a time saver as it was when people were using the previous overly complicated 97 step method, but it's still much easier since you don't have to seek out or extract the desired FW.

THIS is the reason I haven't pulled the trigger on 6.0 yet. I like to have control over when to RCM and when to boot into plain ole' vanilla OS. And knowing me I'd do something to mess up AutoRCM and would have another headache to deal with.

Until Tinfoil 'Ignore Version' stops working and I know more about this "6.0.1 now needs to online verify games" issue I'm staying on 5.1.0.
