I wanted to know if there is any method to change the language in pokemon scarlet/violet in a game that has already started?

Unfortunately no, unless you save edit. It's been like this in every mainline Pokémon game with a language select

if I knew that but my doubt was if there was any unofficial method

I know that PKHeX has been updated to support Pokémon SV, but if language editing is supported, I'm not sure. If it is supported, it will be under the "Trainer" menu in PKHeX

You have to use pkhex as mentioned already.

PKHeX > SAV > Trainer Info > Language OR
PKHeX > SAV > Block Data > KGameLanguage > blindly change the number?
