Hi i got a hackeable switch. What should i follow first to do it right? Firmware version 5.1.0. should i update it to 6.2.0 trought the console?

Do not skip backing up your nand and boot0/1, under any circumstances.

In case they release a cold boot hack which most likely will only work on lower firmwares. Personally i dont care as i have sxos.

Someone posted a nand/key backup tutorial here already. Or you can use this

Can i backup my switch nand with a 16gb sd card? or i need 32 gb sd card?
Not even sure if a 32GB is big enough. A 64GB formatted as exfat is best for backing up the NAND. After this is done and safely stored on your computer, you can reformat to fat32 if you want and proceed from there.

I highly recommend following this guide first: https://guide.sdsetup.com/#/

He's updated and helps a lot for the introduction on the homebrew scene, providing troubleshooting, FAQs, files and basic customization options to start with.
Also, do NAND backup as well as the guide recommends, it's extremely important.

If you follow this guide you should have no problems. If you have any, just ask ahead for help.

You can update from the console since the exploit is up and working on 6.2 FW. The ChoiduJourNX is an alternative to reverse your console FW to the one right now if needed in the future.
Also, 32 GB SD is big enough. My NAND backup is about ~29 GB.
