I've witnessed some truly amusing happenings on 1.8.0b just now...
Playing ZBOTW. Climbed a tree, picked up an egg, then all of a sudden the textures on the tree model filled in with a transparent red colour. It then froze, and upon unfreezing my player model completely disappeared. I could still move the camera and manoeuvre as though I were still there! Yet, there was no player model in-game or within the inventory. Very peculiar. Anyhow, I re-loaded my save, and my player model returned.
The tale continues...
Upon walking/running around I noticed I was hovering above the surface everywhere I walked, which was a new on me. I was entering water on terrain where there wasn't any. Lilies were floating in the air way above the water that I could see, and I found myself getting stuck and colliding with water that simply wasn't visible at all!! If I spammed jump whilst I was colliding with this invisible land water I could actually propel myself high up into the air, above hills and just above the trees, all whilst the swimming animation was still provoked.
Then, mid air, my monitors display went black, CEMU locked up and upon the screen initiating again I was displayed with a message that windows had run out of memory, and that I'd need to close CEMU.
Plenty of odd happenings in the Windows Event Viewer:

So... No crash log was generated by CEMU which isn't any more helpful. No graphics pack was active, and no pre-existing old shadercache data - infact a fresh wipe for the new CEMU revision.
