No way to roll back now. I think the general consensus is that it's not a bad idea to update, as there are no known or anticipated exploits as of yet. Many recommend updating and waiting for news later, so don't fret about it.

A good start would be turning off auto updates in the options settings.

The Switch doesn't "magically auto update" after downloading a demo, you've probably accepted the upgrade dialog by accident tho.
