Hi so I did something kind of dumb. I wanted to update my emunand to 9.5 (I have a n3dsxl) and used big blue menu since it was one of the methods posted on updating emunand firmware since sys updater kept giving an error when trying to install the 9.5 files. Is there anyway I can recover my emunand? Since I have my sysnand and emunand unlinked I'm not worried about the sysnand but I need to recover my emunand. How can I do that? I searched around and haven't really found an answer.

The emunand would end up the same way as your sysnand was when you made the backup, so you will have to reinstall any cias you had in your emunand.

Last question, how would I inject Fbi again into the emunand? And does the emunand inject program work on mac?

Dont really know if it works on a mac :(
And from what you say, it's a n3ds so you would had to install fbi BEFORE creating the backup.
if your nand backup does not have fbi already installed, you can follow this guide https://gbatemp.net/threads/release-inject-any-app-into-health-safety-o3ds-n3ds-cfw-only.402236/
Personally, it did not worked for me, so you can try to see if it works for you.

What i had to do was using the gateway menu, i restored my nand backup, installed the fbi cia, made a new nand backup WITH fbi already installed, then injected the nand in the emunand partition on my sd.

It's a long process but it worked out pretty nice, and dont worry about restoring your nand, it's a safe process.

Hope this helps!
