you can play them in either retroarch or with the stock emu. In retroarch I believe you can press select+start to open the quick menu, then there's a setting somewhere for disc control. this let's you select a different disc. As for the stock emu, i'm not sure but I think you just need to place all the disc bin/cues in the same folder, so for ff8 you can create a ff8 folder, put all the bin/cues in there for disc1-4. Then add it to the Games folder. Now when you want to switch discs, you press the "Eject" button

It seems to switch a disc on multi-disc PS1 games on the BIN format in the stock emulation, I have to click the "START" and "SELECT" buttons to access a menu, click on the "Change CD image" setting and then choose the disc I want to change to or if instructed to do so while playing a game, I have to click the "OPEN" button and select the disc I want.

Regarding switching a disc on multi-disc PS1 games on Retroboot, apparently, I just have to access the Quick Menu, click on "Disc Control", then on "Load New Disc" and choose the disk I want to play but the latter setting itself says it's a legacy option and to load multi-disc titles via M3U playlist and the "Insert Disc" and "Current Disc Index" settings don't appear in my Retroboot but according to the "Load New Disc" option, it might be because I don't have said M3U playlists.
