Oh, God, where to begin...
1. Rhythmic tapping of fingers
2. Shaky leg (and fingers)
3. Rapidly snapping fingers
Lots and lots of other ones that I'd be embarrassed to share. I have particularly aggressive stimming.
Is it just actions you do automatically when idle?
Sort of. Kind of like Tourettes, but less involuntary. Like we find ourselves stimming without thinking about it, but if we focus we can stop stimming.
Key word there being focus. And getting an Autistic person to focus on ANYTHING for a long period of time is very difficult (;

Clicking my fingernails with my fingers and thumb, making noises with my mouth, replaying earworms from catchy tunes in my head and with my mouth, squirmy feet. Doing something like "ffft, fft" with my lips while I'm really focusing on gaming, which causes them to chap often.

jokes aside, i chew on stuff, grind my teeth, shake my hands, make random noises, talk to myself, and tap my foot on the ground sometime (if that is one)
also i make up dialogues using impressions

Do you know how to whistle? Same problem. The "technique" is trivial to explain, "just pucker your lips and blow", but the difference between a whistle and a puff of soggy air is in half a millimeter change in position, and you can't explain that in a tutorial.
