Export your save using checkpoint copy it to pc and use a a hex editor like hxd search for your stats. Your stats will be in hexadecimal so If your using windows open the calculator and put it In programmer mode. You will know if your in right area because your stat values will all be together. I think hp and MP are how much you have and your max. Also if save is in little endian meaning you might have to reverse the bytes so if you want to search for 99999 in hex thats 01 86 9F but you reverse that to 9F 86 01.

You can see a simple video tutorial about how to use cheat engine on edizon or sx os native CE. its very easy to use.
i know how to use it, but dont know how to export a cheat file to other people. sorry. But already used it on SMT3 remaster, and you need to be aware that stats and XP are things that you cant see very clear in game (beacuse HP, atk, and others are results on base stats calc over other things), só you cant search for it directly, and if you edit, it will return to original value. So the most smart thing is give 99 incences that you can use to boost base stats 1 by 1.

Also, if you think EXP is very low, maybe you is playing NORMAL or HARD mode, so you can go in the settings in game and switch to MARCIFUL (or the most easy mode) when walking around and battling random demons, you will get a great amount of XP. (but it will reduce random encounters, so use any monster with Riberama to increase encounters. And switch back to normal or hard when about to face a boss.
