So, swapping Girahim demon Sword with the master sword works, but after using it I can't select his weapon anymore because the weapon is deleted by the game. Is this intentional because it makes the character unusable. I obviously backed up my save first lol. But you should add this warning to the op.

Edit: its not deleted, just added to Link's inventory. Changing it back fixes it.

...can't you just go to another character and change one of their weapons into a Demon Sword? As far as my experiences go, that should work.

Thanks for letting me know. I'll add that warning as well as the fix to the OP.
To get the sword back, just select any character with at least two of a single weapon and change it to the demon sword.

Okay thanks, found the weapon added to the other character and changing it back to demon swords worked. It kept the stats and everything.

So I've completed the Wind Waker map and moved on to the Master Quest map, and now I'm looking for a way to give allied keeps infinite health for the missions where I'm supposed to defend my keeps while they're at very little health.

Just use the freeze time code. That stops enemies from spawning.
