Hardware Questions about the RCA cables...

I'm going on vacation, and I'm taking my PS3. I may run into situations where I need to use the RCA cables that came with the system, but I don't know how to get the PS3 to detect them. I've only ever used HDMI. How do I get the system to detect that the RCA's are plugged in so I can actually get a visible screen?

Also, is it possible for the PS3 to output the video through HDMI and the sound through RCA? I'm asking this because I may also use my PS3 for youth events at my church (of which I am the Youth Director).

it also should be possible to route the sound via the composite, in not sure though
worst case scenario is you have to buy a optical to composite converter
