What do I do with all the parts? Gonna restore soon, wasn't sure if I use all the parts separately or combine them. Not sure if I'm allowed to state the name of each part on here.

You need to combine them into a single file, Rawnand.bin, and put that on your Sd card to restore the backup. Use the joiner script provided here: https://github.com/CTCaer/hekate/releases/tag/v4.2 to combine the parts on Windows or Mac. However, keep in mind that you can only restore the backup using an exfat formatted SD Card, not using the fat32 one I'm guessing you used to back it up. You'll need to reformat your Card first.

Also, there is no harm in stating the names. They should just be named something like rawnand.bin.00, rawnand.bin.01,rawnand.bin.02 etc.

What do you do with BOOT0 and BOOT1? I've got BOOT0 BOOT1 and rawnand.bin which is 29gb. Am I good?

Yes, the rawnand.bin and the two boot files together makes for a full nand backup. Be sure to restore both the boot files along with the nand file for a successful restore!

Afaik theres an update needed if u want to use exfat. What if I havent used exfat at all and want to restore nand? Will it read the exfat sd card without the update?

hekate can already use exfat formatted sd card regardless you have installed the exfat update or not

Im planning to restore NAND as well. My sdcard is currently on FAT32 so I have to reformat to Exfat to transfer large files. Does this mean I have to dump my "Nintendo" folder to my PC so I can use those again after I do the NAND restoration? Is there anyway around this?

it's likely easier to get a second sd card (64gb or more) for the restoration effort.
transfering files back and forth (if you format, you have to save everything to pc first) takes forever on larger cards and might leave you with some corrupted files too.
and the danger of forgetting to format back to fat32 at the end too
