How broken is broken?
https://pinoutguide.com/Game/PlayStationAV_pinout.shtml details the pins themselves, and soldering things should not be that bad if you can at all solder, or indeed go the other way and solder on your own pins/RCA connectors (cinchverbindern?) to the relevant pins on the board/connector to make it a more universal setup (don't see it so often for the PS1 but SNES it is common enough for)

I have found a fair few at car boot sales, flea markets and the like over the last few years, people not knowing what they are and selling them to me for next to nothing, but that is more variable and probably now the wrong time of year.

The first above link also notes it fits PS1, PS2 and PS3 so going later might be an option (I had one for the PS3 some years ago when it was attached to an older TV without HDMI but with component, though maybe not that specific one). Back in the day there were a fair few universal takes as well and they were not bad for basic cables compared to something like the xbox where third party cables are more dubious so you might also find something on that front.

Beyond that check the usual online sellers of everything (cables being popular there), mod shops if any still exist around you (Germany cracked down hard for some years now), second hand game sellers, shops specialising in cables for things and the like.

Piggybacking on the above I can confirm PS1 and PSOne use the exact same MultiOut connector. I have swapped from one to the other myself using a $5 "for parts" system. These days ebay still has $10-$20 "for parts" systems listed with free shipping.

Indeed, it seems that there are no connectors available for now.
Well, there's always the option of soldering the cable directly or adapt a snes one, for instance...
