sysNAND is just your real NAND (internal storage). redNAND (redirected NAND) is a copy of your NAND saved on an SD card. When you make changes while in redNAND it saves to the copy of your NAND on the SD card. redNAND has the advantage of being able to "brick" it and still have a working console. This is because you are only borking a copy of the NAND, not your actual internal storage. This doesn't really matter for 99% of users though as just installing games will not brick your console. You should just use Mocha CFW. Leave the default setting and you'll be good to install and play regular titles, DLC, out of region, and VC titles.
