I foolishly ended up buying stolen eshop cards and now I can't activate them, does anybody know of a way in which I can scan them like they do when you buy on a shop like gamestop to be able to use them?

nope, I would shred them if I were you. just possessing the stolen eShop cards is illegal regardless of who stole them and how they became in your possession.
