Katakuri's bounty is 1' 057' 000' 000
Wanna know why?
Because Luffy has always been associated with the number 56
When he was kid, you could see him with a shirt with the number 56 on it
The name of his devil fruit in japanese is Gomu, which is also how you pronounce 56 in japanese
As shown during the fight between Katakuri and Luffy during the Whole Cake Island arc, Katakuri could do anything Luffy could do, but in better way.
Hence the 57 in his bounty, just to say he's above Luffy
