I imagine it could be different depending on the game, but some seem to identify the PSP by the MAC address.

PRO CFW sets the default MAC address to something generic by default (so, uniform across different PSPs) and this can break some of your old saves after installing it. In the recovery menu you have the option of un-hiding it to set it back to the original value. I believe there are also ways to manually set it to whatever you want. As for changing the value in the save file itself I can only suggest looking for the values with a hex editor. Of course, the MAC address could be just one of multiple identification methods...
