If it's an MB model, it can be jailbroken untethered on 4.2. Otherwise, you'll have to wait for a new jailbreak to be released (a new exploit has been found by the way) You have to use redsn0w on 4.2.
Also, I don't think that a respring requires the user to rejailbreak their device if tethered.

No way to jailbreak MC models on 4.2 yet. But I think that Apple is still signing 4.1 SHSH blobs (not sure though) You might be able to downgrade and jailbreak 4.1 in the mean time.

If you're on 4.1 and press update (not restore), the jailbreak itself should be removed and would go to 4.2.1, however folders created by the jailbreak might still stay. Music, Video, Apps and saves should stay. If you want to remove all jailbreak stuff (including folders), you'd have to do a restore which removes EVERYTHING (Music, Video, Apps, Data and saves). This isn't a big problem if you have your Music, Videos and Apps in iTunes and you have a valid backup of your iPod in iTunes too. That way, you could do a clean restore then Restore from a backup then re-sync your stuff and keep your saved info.

I know, but for some reason, Apple has been signing those SHSH blobs long after 4.2 was released. I'm just not sure if they are still signing them now.

Apple is still signing 4.1 for the iPod touch 2G.

I've heard that they're not signing 4.1 for the iPhone 3GS and later though.
