I haven't gone about changing my DNS settings or anything yet since my units are in airplane mode, but what's the best way around this? I could set up a new SSID with the ReSwitched DNS already coded to it, but for a typical end user what's best practice? Connect to WiFi and immediately change DNS settings?

I'm not sure how long it takes consoles to check into Nintendo servers after they have a valid internet connection, so I'm just wondering if that 30 seconds it takes to change DNS after connecting is long enough for a proper check-in and flag to be set.

You should disconnect/unplug your wifi router from Internet
Connect the switch on wifi, change the dns parameters and reconnect your router on Internet.

I have theory (base on my switch status) like they checking your device before let you connect to Internet

Switch -> modem -> Nintendo server -> Internet

if you passed their server test your device can use Internet.
My switch cannot go internet now because I blocked all nintendo server LMAO
