I remember emulating a lan network with hamachi back in the day. Could long distance system transfers be conducted with something like this? Is this already being done? Just an idea I had but was curious if there are some technical limitations preventing something along these lines. There is probably some obvious reason why this wouldn't work but just curious.

If I'm remember correctly, when I'm doing system transfer, they only connect to my iPhone at the start and the end of transfer.
Out of that, they swith to local mode (orange wifi icon) and not connect to iPhone at all. So I don't think you can use Hamachi in this process.
