1. How to take screenshots when using Chiaki? I am playing on my Switch and it takes screenshots only on Switch (when I press the capture button) which are very low quality and fuzzy compared to 4K on PS5. Can I map it to the Dual Sense screenshot button so my PS5 is the one taking a screenshot?

2. How to block Sony servers during Remote Play? I am on my local network so I don't need internet connectivity however my router can't set up a SSID without access to the internet so is there a DNS to block all Sony servers?

I assumed you were using a Steam Deck, I did not know it existed for the Switch so I can't help with that.
On the Steam Deck I simply use the shortcut I set for that key, the Switch doesn't seem to have enough buttons for that though, so dunno.
