Anyway, there obviously is a plethora of photoshop guides available, but its all so overwhelming. Can someone point me in the right direction?

I quite like https://www.youtube.com/user/PhlearnLLC
It is not necessarily brand new to whatever, though they do appear to be offering that as a paid thing now, but watch a few of them and you will start predicting what they are doing to do next or thinking of alternative steps. Once you have that you are there.

The above is a great thing to learn and covers lots of nice things.
Also depending upon what you are doing in graphics I highly suggest also picking up a vector image editor. Illustrator is Adobe's offering but if you prefer the free equivalent is Inkscape, and where some might still sneer at Gimp as an alternative to photoshop few will do that for inkscape.

I learn how to use Photoshop by using it i know that doesn't sound like great advice but it's helpful

I must admit that's how I learned too, i'm no expert by any means, however if i've wanted to do something i've just learned what i needed to achieve that goal. Usually by searching on Google or watching a YouTube video. My now retired boss at work taught me a few useful tricks too.

In the grand scheme of thing's considering what Photoshop can do i know next to nothing! however i know enough to do the tasks I want to.

I honestly learned it by using it and messing around with it. Like all the other things in my life.
I would google what you want to do in photoshop and you will find some guides.
