IP hiding.
The main way is a proxy connection of some form, there are many grades of proxy (many of which still forward your IP).
Basic proxies:
http://www.samair.ru/proxy/ (take note of how they term the proxy)
A secondary type of this is the web proxy, these are better than some straight up proxies in many ways:
http://www.hidemyass.com/ is just one of many.

TOR is a form of proxy:
http://www.torproject.org/

There are also tunneling connections. ssh and VPN are available

I have not used any of those mind and personally I have access to other similar things if needs be.

Note all such connections will mean you take a speed hit and may have other effects (see the recent debacle with the IWF and wikipedia).

However unless you are running a server of your own from an IP address then none of the above will do anything for spam blocking.
There are many spam filters available which are just about your only recourse if you are getting junk mail and you and more to the point most good email providers will allow for a dummy account, should your provider not care for such things then there are many throwaway accounts. They vary in what they do but start out with something like
http://www.mailinator.com/ (note this site has no passwords (anyone can read anything) but you also get a "1 way" address).
I find them pretty good for signing up to forums to download stuff (many of the companies that make my cheaper electronics seem to take great delight in requiring registration for basic downloads).

Tor does a good job and very simply.

Your IP has nothing to do with emails. Email is a different system than browsing, the 2 are not related.

It depends on where you get your emails from, IE your ISP or hotmail/google/yahoo type.

If you use outlook for offline emails (POP3) then your emails come from your ISP and the spammers would send them to that IP address, not your PC's IP address. Same with online emails like google (gmail) yahoo or hotmail, the spam gets sent there.

Spammers work by sending email to 1000's of email addresses randomly. So they would say start at "fred1@yahoo . com" and keep adding numbers or characters like "fred2@yahoo . com" they dont target by IP address because that IP address would have to have an email server running in order to recieve emails.

Also you can never fully hide your IP as it's fixed by your ISP and cannot bechanged unless you disconnect from the internet or your ISP renews it for another one.
