I'm looking for an extractor for .gob/.gfc files to extract the files from Tony hawk's American sk8land, I was looking for unused content since the TCRF page is quite empty but any extractor I find doesn't work, is there a working one?

For the most part if it is not on https://www.romhacking.net/documents/[469]nds_formats.htm or in fire emblem or pokemon then you are going to have to go manual (hah). It is certainly not a common format I recognise or anything.

The game itself is one of the earlier and more noted examples of a game using a big archive rather that sticking it all in the standard DS ROM format so you might find something (I vaguely recall doing something with it but don't know if I wrote it up), however most hacking I ever saw of this was for the audio (which I definitely recall doing -- had a nice version that played me Tom Waits Starving in the Belly of a Whale as backing audio) as it was a nice early example of streamed audio. The DS Tony Hawk games never quite gained the cult following that the GBA entries got either (not sure why, though flash carts of the day often saw slowdowns with this which probably did not help) so few would have put that much effort into it.

Equally if you are only extracting files then hopefully you can find the pointers easily enough and feed it to a spreadsheet something like https://web.archive.org/web/20170218180937/http://min.midco.net/cracker/filecutter.zip could do something with.
As far as hidden files. I think around the time activision had a bit of a controversy with some embedded hidden files in game code and mandated all future stuff was scrubbed. Whether this fell under such a banner or not I don't know but might explain the general lack of stuff on TCRF.
