Audacity for just trimming/cutting songs. But if you want to remove, say, JUST the vocals, then you're going to need something a little more high-end.

Vocals can be done to a degree with Audacity. You make a track stereo, then invert one of the channels or something like that. There are guides online. It works OK for some songs, not great for others.
