Well, I sold my PS2 long ago and now I'm interested in getting one. For what it's worth, I currently have a PS3 and Wii. If I get a slim, what's my best way to mod it? If I get a phatty, what's my best way to mod it?

I'm looking at the Memor32 soft mod. I'd highly prefer a mod that doesn't include soldering...

If you don't want to solder then your choices are:

Slim ps2 - Swap magic or memor32 + the memento firmware.

Old ps2 - Swap magic , memor32 or the independence exploit + cogswap loader or hdd loader or both if you want.

Swap magic involves a disc swap , memor32 is direct boot , but you'll have to patch the game first with their software. Independence exploit is launched with a ps1 game , then from there you can load stuff off the memory card like the cogswap loader or hd loader.

I'd go for the old ps2 since you had put in a hdd and use hddloader along with it. Its super easy to mod using the memory card exploit..you can find a used ps2 fat for around 80 bucks on amazon
