Snes9x Next on RetroArch Wii. It's optimized not to use frame skipping and doesn't have any audio issues :P Even Star Fox runs full speed :D

I looked it up, nice assortment of systems on it. Does it support covers?

Not entirely sure, but if you care about speed and stability, it has the best Snes emulation (as well as GBA and NES) the vWii/Wii has to offer. The GUI itself takes up a fair amount of the Wii's system RAM. Unlike the GX emulators, there's no random crashing or tinny menu audio glitch.

Did Retroarch ever get the Wii-U Pro Controller treatment?

I don't know, the next version, 1.0.0.3 is planned for release soon, not sure what changes will be in there..

Thanks for the reply. I sure hope it does. I am thrilled to hear that Retroarch runs faster than GX, but after getting Wii-u Pro Controller support in GX, I don't think I could go back to other controllers.
