sysUpdater will be a quicker process, though it's got a chance of failing, but if you use a cia version of it, it will get the permissions it needs flawlessly, and it's just a matter of rolling the dice on whether it fails or not. The four times I used sysUpdater to update/downgrade with CFW, it never failed for me.
How is it dangerous? If you use Luma or any cfw with the firm0 patch (I think that's what it's called? mixed firmware, means that your firmware is just partially downgraded, which can cause critical issues / bugs /other random issues. thats why a lot of people don't prefer the "raw" downgrade, also for OFW users the brick rate was really high, so in both cases a ctrtransfer is the safer method, but everyone can do whatever he/she wants to.How is it dangerous? The only thing I can see, is maybe someone wants to go before 9.0 to avoid themes, or go to 9.5 because it has the Spider exploit...
Spider exploit allowed action replay codes. It's not present in any other firmware, but most of the cheats have been ported to NTR/Gateway...to avoid themes simply don't use them also nfc needs firmware 9.6+ iirc and there are a lot better exploits been found since that old firmwares though.

And I'm just naming examples of why someone would want to be on a specific firmware. I personally don't care which firmware my 3DS is running, but I remember there were some people that were going crazy of someone who found a 3DS on version 1.0
