Would it be possible to make the switch version make look more in line with the pc version?
Ini edits, pak edits, romfs, anything?

If you extract the save with a save tool you will get two settings.json files, which have a bunch of graphical settings in them. Haven't tried playing with them though.

The only thing that really bothers me with the Switch presentation is most NPC hair turning black. Otherwise it oddly feels a lot like the original, a little jerky and grainy. A mild GPU overclock seems to keep dynamic resolution from dropping at least in handheld.

Are you sure there are 2 settings.json files? Only found 1 under Settings folder, and it seems only change settings already available in-game. It could be interesting compare it against settings.json from the PC version.

Late reply but I think I got the second settings.json when I copied all my save files from the PC version. It's inactive because I have it sitting in the base save folder, wheras the Switch version subdivides everything, so settings.json goes in the settings folder.

That said I would bet you could get some effect from copying some of those PC settings.
