I bought one of those gold trimmed 8k Hagibis Switch 2 dock cables (SWC10) and it used to work fine with my Switch 2 but now it doesn't. It still works fine with my Switch 1 and my phone and all the other stuff. I'm using a mac laptop charger which worked before so there should be plenty of power.

My Switch 2 is running version 21.2.0 and I updated the dock to the latest I could find on the Hagibis bbscloud (V20.00.40.00_804000) and I even updated it with a JEMDO firmware that someone else said worked for them (V20.00.40.01_804001) and neither works.

Does anyone else have one of these that still works?

I saw that while searching for a mini dock and bought instead this one:

Very happy with it.

You saw what? Have you seen other folks report this doesn't work? I've found a few threads with reports that the firmware update should solve the issue, but that's not what I'm seeing.
This one specifically:

Stuff on AliExpress tends to be the same with different designs/labels.

I have one, the black and golden SWC10, previously updated to V20.00.40.00_804000 quite some time ago.
Mine still works perfectly fine, just used it last week while I was on holiday.
Have you tried another dock to check if it's the SWC10 that has failed?
When you plugged in the Switch 2, does it at least charge? Switch won't output HDMI signal unless the power supply has sufficient voltage, it could also be the power supply.

The power supply generally needs to be the official Switch 2 AC charger otherwise it doesn't work as it should. Same happened with the Switch 1 mini docks, people complained it didn't work when they needed to have a Switch 1 AC charger.

I’m using it with an Apple laptop charger so it should have plenty of juice. It worked with this charger a few months ago when I first bought it. I recognize that it might work with the official charger but I haven’t tried the official charger since I’m too lazy to untangle it from my tv setup. It works fine with the official charger and dock in my TV setup.

I got an email from Hagibis support a few weeks after I emailed them. They offered to send me an updated unit and I’ll let you know if it works. I also bought one of the “Need Use Switch” ones posted above so it’s a race from China to see which gets here first.

I have plenty of 60w/65w chargers, but for some reason the docks are very picky that they require the official. :/
