Rookie here, what's the difference between them? I always pick Emunand, picked Sysnand once and saw no difference?

Sysnand is your console without CFW (adrenaline or other)
Emunand is your console running from SDCARD (all files are on partition on SDCARD) with CFW (adrenaline)

There is no proper guide, only small tutorials for parts of the process and bits of information scattered around.

What payload? No homebrew/CFW works with 9.0 yet. But it doesn't matter as long as your Switch has the RCM bug as you are only updating sysNAND.

As long as you can push a payload to RCM, you should be fine in a week or so.

Yeah i avoid youtube like the plague only trusted sources .. from what i gathered its so you can have official firmware aswell as custom.. ive been modding systems for decades so im used to sacrificing online play i could care less. I enjoy pc for that tho thanks for the input.
