i just got my sx pro dongle and mini sd card it says i have to update it to use my sd card if i update the console can i still jailbreak?

Use ChoidojuourNX to update to 6.2.0 and choose the exfat format. You can then use your SD Card.
You meant firmware, not SDK right? If you got SDK download link, Nintendo's lawyers would like to know your location.

im just trying to find a micro sd that actually works with my switch i have a 64 and a 128gb and neither work
You need choidujournx and firmware files to update to 6.2.0 WITH exfat option selected. That will allow exfat formated cards.
If you have already done that then you need to test your SD cards.

Usually you don't need to update your internal firmware if you use FAT32 as filesystem on your MicroSD card.
Most bigger MicroSD Cards are preformated with the exFAT filesystem and the switch needs special drivers to read/write on this card. This is why you are promted to update your firmware - only to get the exFAT drivers installed.
If you format your microSD card with FAT32 you should not get the update message.
If you install the exFAT drivers with ChoidojuourNX into your internal flash it may be seen by N and result in a ban if you go online...
I would avoid this kind of inofficial updates of the internal flash...
