What happens when Nintendo stops supporting the eshop? would it just be impossible to download stuff?

the wii shop channel will be discontinued in 2019, and ability to re-download some time later

Correct, impossible to download directly from Nintendo (not like anyone created such a tool for the Wii), so better create those legal backups of your games
i think nus downloader should get an update where it gets downloads from another server and not directly from nintendo

You have over a year. Just download what you want and archive it yourself.
I archived the network files for dolphin, the pre-installed channels, and a few others, as well as the EULA. there are a few other weird files but idk if there's any use for them. I didn't download them, dolphin works mostly fine without them.

yes, they see the downloader's IP addresse, the same addresses seen when you download a game from your console using the official eShop, downloading the same exact files.
their server is a "cdn" (content delivery network), it's there to serve content that user ask. it's just doing that, whatever the IP or the device connecting to it.

if they didn't want anything else than a WiiU to download from their servers, they would use SSL and specific certificates only the console knows.
It's still possible to download by extracting the SSL certificate from the console, but that's just to show that the default cdn is not protected and they don't care which device access it.

what's protected on the other part, is the eshop content (image, game description, etc.), it uses a certificate to secure the access of the eShop data (and not the downloaded content) and to generate a ticket based on your console's ID.

This.
I am fairly sure nintendo was just sure what they did to protect was enough. And for a while it was.
One note is also content that is only encrypted by common keys like demos or updates so there is minimum hassle in receiving those I guess.
