I know there's an official battery larger then the 1500 th at comes with the console, I also know there is a Nyko larger battery but has reports of issues and I know there is Chinese knock offs that I'm not trusting.. What I don't know and hope someone does is what are they gray and white wires on the battery, obviously black is ground and red is positive..

The Console, Accessories and Hardware forum is the best place to ask about this subject. You're in the wrong forum, my friend, this is about hacking the Wii U and vWii, not about Wii U batteries and hardware.

I am also no admin but maybe i can help you. Normally Batteries have a small logic included wich can e.g. report the "master"(so an smarthone, the handheld, an EV,...) if the battery is original, or just provide some imformations like SOC (state of charge), SOH (state of health) etc.
Smarter BMSes (battery management systems) can even control if the voltage on the +/- pins should be activated (e.g. by a FET).
So I assume these pins are for comunication between battery and the controller.
