The idea of emuNAND/redNAND is that it can be updated while your real system (sysNAND) stays on 9.2. Once you have A9LH installed you will be able to use sysNAND on 10.7 as well and not use emuNAND/redNAND at all. Follow the guide to the letter. If you start skipping things, that's when you brick.

Well the reason why i ask this is because it asks to update before downgrading to 2.1 but if i do a restore after the upgrade wouldn't that put my firmware at the latest during the sysnand restore?

What?
You shouldn't be getting any notifications for updates.
The guide tells you to update, and format redNAND twice before downgrading.
Assuming you follow the guide properly you will have your emuNAND and sysNAND swapped with A9LH installed.
So if your emuNAND has the latest firmware, then the sysNAND will have it as well.
Read the guide.
