for switch version 1 does it run better if set to 720p over 1080p or no difference? I know games can vary in resolutions but really damanding games like mk1 will they run better set at 720p on a 1080p or 4k tv?

When the switch is docked (1080p) it runs at a higher clock rate so you actually get more processing power playing docked.
 
The game does not know what resolution your TV is or what output resolution is set in system settings (e.g. one of the Hyrule Warriors games performs poorly in handheld mode because it's still rendering internally at the docked resolution even though the processor is slowed down to preserve battery life).

To get better performance with a lower resolution, you could try using ReverseNX, which lets you run games in handheld mode while docked (and vice versa), so games will usually target 720p or lower and in some cases do less processing - anti-aliasing &c. - along with overclocking

Afaik Penny's Big Breakaway is the only game where if you set your Switch to 720p output it runs better.
