So for the IOSU projects/Homebrew you can't do it with src folder, you must have arm_user and arm_kernel folders?

Yes , IOSU Projects have :

SRC : For PPC Kernel
ARM_USER : For IOSU Userspace
ARM_KERNEL : For IOSU Kernel
