Hacking Where to start?

So, I've just got an already hacked PS3 slim that will arrive here in a few days. Unfortunately, the seller is not able to tell me what is installed on this console.
My goal is to go back to OFW and completely redo everything like installing a custom firmware and so on. Most important is the ability to dump games and play them from the internal hdd (if possible directly from xmb). The best would be if that also works online without getting banned.
But the problem is that I do not know where to start and that most information on the web aren't very helpful right now.I have experience in softmodding Wii, Wii U, 3DS and a few other devices, so I think it wouldn't be a problem to follow tutorials, but where can I find some good ones that are not outdated? And which custom firmware should I use?

I would be very thankful if someone would be able to help me out! :)

How do I uninstall the current CFW? Just install a firmware via USB?
Just update the CFW via USB. I like Rebug 4.84.2. No need to go back to OFW.

Use PSN patch to play online. Multiman to play the games. I like to change out the hdd to a 500 GB SSD but you have to be careful to not get the cheap crappy TLC drives, the MLC are better geared towards gaming and last longer.

Alright, so it would be enough to update straight from the actual CFW to Rebug, right? What happens if I do a system format to erase all data created by the pre-owner?

nothing. you'll have to reinstall the firmware. if you want everything to be completely clean (even a fresh xregistry.sys), you need to format the drive on the pc. the xregistry.sys is overwritten when you create new users/accounts, not deleted. https://www.psdevwiki.com/ps3/XRegistry.sys#Regenerating_a_new_xRegistry.sys your system is a NOR.

I gave up with upgrading the internal drives and just store games on a nas and stream them over ethernet. I didn't measure the speed, but I didn't notice that it was particularly slower.
 
Okay, one last question: If I upgrade the hdd (without doing anything else before) and install the OFW via recovery after that, will that work? It is a normal retail PS3 with a DEX firmware on it. I have a spare 1TB hard drive here, so it would be nice to do that.

If the idea is to go completely OFW, then I’d update by USB first. Then swap out the hdd. It will save you a step from having to format the installed hdd then swap and format again.
