I'm thinking about buying a 128gb and a rcm jig for hacking but will that be enough memory? Should I try to get a 200gb instead?

Definitely go with 200, they're reasonably priced nowadays. 400 is still overpriced, 256 seems to be a little higher per GB than lower capacity cards, for not much extra capacity, so not really worth it IMO.
It should take you a while to fill up that 200 GB unless you download all the ports, Switch has few exclusives right now. Once that's full 400GB cards should hopefully be a lot cheaper.

Class 10 is 10mb/s. Don't know if anyone tested and see the difference, but the Sandisk Micro SD with Nintendo Switch logo on it is classed U3 (30mb/s). If the extra speed doesn't help, why would they choose this type then?

but Switch don't full use it.

I got a 64gb and i'm ordering a 128gb tomorrow. What i plan on doing is switching between the 2 so i can fit me a good amount of games on my 64gb card and the bigger games/ones that will not fix i'll put on the other card.

Got a 400gb for £160.
Will convert xci to xc0,xc1 etc maybe.
Works fine with no exfat upgrade

Class 10 means 10 megaBYtes per second minimum. UHS-1 cards write at a minimum of 10 megs a sec, but burst up to like 130. They average around 80

The Switch cannot achieve max speeds of U3, but U3 has higher minimum speeds than U1 so it's better to get a U3 anyway.

Samsungs Evo Plus (NOT evo+) line should be the sweet spot right now. 128gb for 35€ 256gb for 80€ (should be obtainable through ebay for ~60 because there is a Samsung S9 promo). With 100/90 r/w on par with the Samsung Pro and Sandisk extreme lineup.

64gb seems a little low with emunand.

I went with 200gb at the time as the next jump up wasn’t worth it as the price rises pretty steeply.

You can get a 400gb one for a reasonable price. Depends on your budget. Bigger is better. As the wife says

But if you factor in future dlc for games and double pack games like Rez/Bayonetta they have dlc only game.

As one who prefers physical copies of games, I don't expect to fill my console or my 32GB memory card anytime soon. I do have a few games installed, but they're mostly small ones like Disco Dodgeball Remix. When I do upgrade, it'll probably be to a 64GB one.
