Hacking USB Loader GX + Red Steel 2

do i need any additional .dol file for red steel 2 in order to play it? or i just need a usbloader gx.dol to run it

When I play RS2 with USB Loader GX, it loads but then returns to the USB Loader GX menu. I also have a wiikey v1 installed.

to keep things simple, can i just burn to disc and play?

Yep, you can. Be wary that if you don't use a app like GeckoOS, you'll probably miss some IOSes and/or will be asked from the game to update, when launching the disc.

Other than that, it should work fine.
