I did a quick look at RwanLink's channel, and the final version of this project will likely be a 20-minute animation. Very nice.

At least a project like this is less likely to be squashed by Nintendo. They're after fan games more than animation projects.

Am I the only one sick of seeing " Unreal engine 5 remake of x game is amazing!" When its just a demo that will never be finished or a private school project? Click bait be real yo.
To be honest, I am, but only to a point. I think that projects like this are amazing, whether they're a playable demo or an animation. In fact, it gives fans an idea of what kind of "next-gen" interpretations they like. I wouldn't discourage anyone from giving this type of project a try. There are two issues that come to mind.

1) When news sources title it wrong. "Fan recreates Ocarina of Time in Unreal 8.9" gives the wrong impression because people think it's a "beginning to end" remake. It could be a playable demo, a demo not available to the general public, or an animation. After the first few times, people temper their expectations, but many go further and disregard any similar stories as clickbait. It ends up being a disservice to projects in the long run.

2) DMCA takedowns. Any project with long-term plans is likely to get DMCA'd before completion, especially if it's Nintendo-related.
