Chayotes are fucking awful raw... try to peel one and it becomes super sticky, and leaves your hands feeling like you just poured "Crazy Glue" (Cyanoacrylate) over them, washing your hands leaves your skin dry, the reason to peel them even for cooking is because it's skin is incredibly fibrous and hard, on top of having thorns.
The center of this shit, the core, is equally fibrous and hard to chew as the skin.
I personally avoid them, and only use them for cooking chicken broth... and that's just because mom and dad loves Chayotes.
If you ever cook one: use gloves, remove the skin, slice it into quarters, and remove the core. Boil for 10 to 15 minutes, or until you can pierce it with a fork, lift it, and the chayote easily slides right off. That's the "just perfect" point.
