You could try putting the modified sharedassets.assets file (that is provided online to activate the debug menu for the PC version) in the correct location using layeredfs, you can unpack the romfs using hactool to figure out the required path. The PC file may or may not be compatible with the Switch port of the game, if not you'd have to go further with decompiling the assets file and finding out what to modify before recompiling. Unless someone has already done it for the Switch port.
