Not released to the public just yet and neither do I see a ram hacking tool being released for the public any sooner after CFW is released. Changing the gender to Story mode octoling will get you banned online. Just like on the Wii U. The newer Octoling gender isn't released yet I assume. Not sure if they're in the game as of now.

For those who are wondering how it works: Since @Reisyukaku made a script to dump/inject saves files for <= 3.0.0 Switch, I am able to change any information in the save file in version 1.0.0 of the game. So no "online hacks" or anything that could ruin the online.
 
It's 1.0.0 Splatoon 2. They're offline.
In their tweet they were jumping around the hub, and they've placed offline profiles there to load if the game isn't connected to the internet. They've changed these offline squid profiles with the updates. Some of them are the 1.0.0 versions, I can tell, I've been screenshotting comparisons.

I have seen a lot of videos edited with after effects that would make you think twice about it. Maybe I shouldn't have said photoshop, but you get the point.
 
What kind of protection have they put into Nintendo switch saves?

I wish they can unlock them soon for public release so we can start hex editing :).

But I bet some devs will surely opt for a custom checksum and screw the moding a bit
