I have a console only switch that is a non-patched refurb from nintendo. I was thinking one day I would like to hack the switch, however I already have a banned switch for offline. Should I update this switch to play online, or should I keep it offline so I dont lose the moddability

dunno, it's up to you.
Just don't do something to get banned.
like piracy. emuMMC and standard crypto NSPs are safe I think.

if you have one hacked and banned, you want another one for hacking? what FW it's on?
you can install emunand into it if you want

I have my modded console that I installed SXOS as soon as it came out. This console is now banned. So I will keep it for offline gaming and testing out homebrew.

I also have another non-patched console on 8.1.0 that I want to take online so I can play Tetris 99 and Smash Bros. I'm more wondering if I should just leave this online and maybe one day if I need another modded one it will still be modable. I would then have to buy a new console for online.

Or just take this online and play it as is and home that it will forever be modable.

You won't lose moddability, so go ahead and update. If you eventually decide to hack it, set up an emuNAND and use that for homebrew/CFW so you can keep you sysNAND clean to get updates for your legit games and use online.
